Introduction

Potato is the most important tuber crop of the world, which belongs to Solanaceae family. It is also considered as the leading food in several countries of the world, and in India, it is an integral part of almost every household. It is a rich source of carbohydrates. Several varieties of potato are grown in India but Kufri Jyoti, Kufri Jeevan, Kufri Red, Kufri Sindhuri are mainly grown. 

Now purpose-specific varieties like Kufri Chipsona-1, 2, and Kufri Chipsona-3 have been released, which are mainly used for making chips. Although, potatoes are mainly used for vegetable making, yet value added products are also prepared viz. starch, dried potato, frozen French fries etc.  However, potato chips are famous world over.
